Put frozen backstrap in a bowl or pan and cover with zesty italian seasoning overnight, take out of marinade and tenderize if not done allready, after marinating place backstrap on foil and cover with onion, bell peppers, and salt and pepper to your taste, I also add some cayenne pepper cause I like it hot, then layer it with some bacon and pour a small amount of the marinade over it and cover with foil, wrap ends of foil together pretty tight and place on grill till done, I like mine medium well so it takes about 6 or 7 minutes on each side, so adjust to suit how well you want it done. We usually have some mashed potatoes and corn with this or maybe a baked potato whatever you prefer
